I wanted to make something fun for a brunch we were going to, so I found this healthy spinach quiche recipe. This was pretty simple to make and it was a HUGE hit at the brunch. We had tons of food and this was the only thing that was completely eaten, so I promise it's good!
Ingredients:
• 3 oz. crumbled feta cheese
• 2 t vegetable oil
• 1 medium onion, chopped
• 10 oz. package frozen spinach, thawed and drained
• 1/2 c fat free shredded cheddar cheese
• 6 egg whites
• 1 egg
• 1/3 c fat free cottage cheese
• 1/4 t cayenne pepper
• 1/8 t salt
• 1/8 t nutmeg
Directions:
1. Preheat over to 375.
2. Pour oil in a non-stick skillet and warm over medium heat.
3. Add onion to pan and cook for 5 minutes or until translucent.
4. Add spinach to pan and cook until moisture has evaporated or about 3 minutes.
5. In a large bowl, whisk the feta, cheddar cheese, egg, egg whites, cottage cheese, cayenne, salt, and nutmeg.
6. Once the spinach and onions have cooled, add them to the bowl and mix well.
7. Spray a pie pan with non-stick cooking spray.
8. Pour mixture evenly in pan.
9. Bake for 30 to 40 minutes or until egg is cooked.

My Hubby would love this. He loves spinich. It looks so pretty. Hope your brunch was fun.

ReplyDeleteMy husband would love it because of the spinach. I will eat nearly anything with feta cheese... heck, even spinach. I would like to try this. It also appeals because it sounds so much healthier than some quiche recipes!
