Adapted from Branny Boils Over
Ingredients:
• 16 oz chickpeas
• 1 large sweet potato
• 2 T tahini
• 1/4 cup olive oil
• 2 cloves garlic
• 1/2 cup stock
• 1 t salt
Punch holes in sweet potato with a fork. Microwave in a bowl for about 6 minutes or until full cooked.
Mix chickpeas, sweet potato, tahini, olive oil, garlic, stock, and salt in a blender. Add stock until you reach the desired consistency.
Serve with pita, veggies, or chips.
