Tasty Deviled Eggs


Hubby is starting a diet, so he wanted to make some protein-filled deviled eggs.

These are a great snack or would also be perfect finger-food for a Mother's Day lunch!

Ingredients:
• 6 eggs
• 1 teaspoon white wine vinegar
• 3 tablespoons low fat mayo
• 1 teaspoon mustard
• paprika
• salt & pepper to taste
• hot pepper sauce (optional)
• 1 teaspoon chopped jalopenos (optional)

Boil eggs in a large pot.

Let eggs cool and then peel them.

Cut each egg in half. Make sure to save the yellow yolk for later.

Mix egg yolks, mayo, mustard, vinegar, salt, pepper, and optional ingredients (if you want a spicy egg). I hate spicy foods and Hubby loves them so we made a little of each.

Mix well.

Fill each egg half with the mixture and top with a sprinkle of paprika.

Pipping in the filling is a little harder than it looks, your scoop idea looks a lot easier. Feel free to stop by my blog for a cup of coffee sometime.

    I love deviled eggs, but I can never seem to make hard boiled eggs right. :(
