White Chocolate Berry Cheesecake Dip

This is amazing.

And it's addicting.

I made it for a mom's night out recently and it was gobbled up in no time by my friends!  The recipe is from here, but I doubled the white chocolate chips to 2/3 cup for some extra sweetness.  I brought Nilla wafers to use as dippers and they worked perfectly.  Even if you don't cook, this is super easy to make and will impress everyone!

Low-Fat Pizza Dip

The husband and I made this as an appetizer for a tv date night after our son went to bed.  We loved this and definitely pigged out way too much!

Ingredients:
• 8 oz. low fat cream cheese (softened)
• 1 packet Italian dressing mix
• 1 jar pizza sauce (I think we used about half of a large container)
• 1/2 onion (chopped into small pieces)
• 2 oz. turkey pepperoni (chopped into small pieces)
• 1/4 c. parmesan cheese
• dippers (crackers, bread, etc)

Cook onions over medium heat until soft.

Combine the cream cheese and dressing mix.  Spread into the bottom of a small oven-safe bowl.

Add the onions on top of the cream cheese mixture.

Pour sauce over the top, sprinkle with cheese, and top with pepperoni pieces.

Bake at 375 for about 10 minutes or until warm throughout.

Serve with dippers and enjoy!

Three Cheese Artichoke Dip

You cannot go wrong with any kind of artichoke or cheese dip in our house. We'll eat it up! Long story, but our old grocery store used to sell this cheese artichoke dip in the deli section a few times a year and we loved it. They stopped selling it and we would always go back to see if it would be there by some miracle. So ever since then, we've been trying to replicate it. This recipe isn't the same, but it's still very good so I wanted to share.

Ingredients:
• 8 oz. block of softened cream cheese
• 1 cup mayo (I'm not big on mayo, so I would suggest a little less if you don't like it that much)
• 14 oz. can artichoke hearts, drained and chopped
• 2 green onions, sliced thin
• 1/2 cup grated Parmesan cheese
• 1 cup shredded mozzarella (we used low-fat)
• dash of worcestershire sauce
• salt & pepper
• dippers such as crackers, veggies, bread, etc.

Preheat oven to 350 degrees F.

In a large bowl, soften the cream cheese with a spatula.

Add in the mayo and mix until smooth.

Add remaining ingredients and stir together.

Transfer the dip to a 9x9 baking dish.

Bake for 30-40 minutes or until the top is golden brown.

Serve hot.

I dipped in some leftover french bread and it was really good!

Low-Fat Baked Onion Rings & Dipping Sauce

Who doesn't love onion rings? And that sauce they serve at restaurants is amazing! But after eating a bunch of them, onion rings can make you feel a little guilty about indulging. Not these! They're baked and low fat! Let me warn you that the onion rings have some prep time so you'll need to plan ahead. The sauce takes 2 minutes to whip up.

Baked Onion Rings
Ingredients:
• non-stick cooking spray
  • 2 peeled onions
  • 3/4 cup all-purpose flour
  • 2 -3 egg whites
  • 3/4 cup nonfatbreadcrumbs or 3/4 cup lowfat breadcrumbs
  • 2 teaspoons italian seasoning
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1/2 teaspoon salt
  • • 2 large onions
    • 3/4 c flour
    • 3 egg whites
    • 3/4 c breadcrumbs
    • 2 tsp Italian seasoning (I made my own with equal parts of basil, oregano, rosemary, and thyme)
    • 1.5 tsp garlic powder
    • 1.5 tsp onion powder
    • 1/2 tsp salt

    Preheat oven to 400.


    Spray a baking sheet with nonstick spray.

    Slice the onions width wise and then break them apart into rings.

    Pour the flour into a shallow bowl, the egg whites into a second, and the bread crumbs and spices into a third. (Pie pans work great for this.)

    Dip each onion ring into the flour, then the egg whites, and then the bread crumbs.

    Place finished onion rings on the baking sheet.

    Bake for about 20 minutes or until crispy.

    Dipping Sauce
    Ingredients:
    • 1/2 c mayo
    • 1 T ketchup
    • 1/3 t paprika
    • 1/4 t salt
    • 1/8 t oregano
    • pinch of pepper

    Mix all ingredients together in a small bowl. Serve cold.
    Yum! Great snack and guilt-free!

    Pumpkin Favorites

    I have a confession.

    I don't like fall.

    I get sad that summer is ending and fall makes me think of cold & snow coming quickly. But the one thing I DO like about fall is pumpkin! You can never get enough pumpkin! From crafts, to pumpkin costumes, to pumpkin spice lattes...they're the only thing I love about fall!

    Summery Sweet Toffee Fruit Dip


    Looking for a tasty summery treat? This sweet fruit dip is perfect! I want to thank Our Best Bites for the awesome recipe.
    Ingredients:
    8 oz. package of cream cheese (I used fat free cream cheese)
    • 3/4 cup brown sugar
    • 1/2 T vanilla
    • 4 oz. toffee bits
    • fruit for dipping

    Allow cream cheese to soften to room temperature.

    Once it's warm, combine cream cheese with sugar, brown, sugar, vanilla and toffee bits.

    Serve with fruit. I used apples, pineapple and strawberries.

    I brought this to work for a birthday celebration and it was completely gone by the end of the day! I was kinda hoping for leftovers for myself!

    Easy Cheesy Queso Dip


    This recipe (adapted from Cooking Light) is great for an appetizer at a party or a fun start to a Mexican meal.

    It's fairly low fat, so that's an added bonus! (See nutrition facts at the bottom of this post.)


    Ingredients:
    • 14.5 oz. can diced tomatoes, undrained
    • 10 oz. can diced tomatoes and green chiles, undrained
    • 1 teaspoon olive oil
    • 1/2 cup chopped onion
    • 2 garlic cloves, minced
    • 8 oz. fat-free cream cheese, softened
    • 1 teaspoon chili powder
    • 6 oz. light processed cheese (we used Cheese Whiz)

    Drain both cans of tomatoes in a colander over a bowl, reserving 1/3 cup liquid.
    Set tomatoes and reserved liquid aside.

    Heat oil in a medium pot over medium heat. Add onion and garlic; sauté 4 minutes.

    Add cream cheese and cook until cheese melts, stirring constantly.
    Add tomatoes, reserved tomato liquid, and chili powder; bring to a boil.
    Add cheese; reduce heat and simmer 3 minutes or until cheese melts, stirring constantly.

    Pour into a serving bowl and serve warm with baked tortilla chips.
