Healthy Spinach Quiche

I wanted to make something fun for a brunch we were going to, so I found this healthy spinach quiche recipe. This was pretty simple to make and it was a HUGE hit at the brunch. We had tons of food and this was the only thing that was completely eaten, so I promise it's good!

• 3 oz. crumbled feta cheese
• 2 t vegetable oil
• 1 medium onion, chopped
• 10 oz. package frozen spinach, thawed and drained
• 1/2 c fat free shredded cheddar cheese
• 6 egg whites
• 1 egg
• 1/3 c fat free cottage cheese
• 1/4 t cayenne pepper
• 1/8 t salt
• 1/8 t nutmeg

1. Preheat over to 375.
2. Pour oil in a non-stick skillet and warm over medium heat.
3. Add onion to pan and cook for 5 minutes or until translucent.
4. Add spinach to pan and cook until moisture has evaporated or about 3 minutes.
5. In a large bowl, whisk the feta, cheddar cheese, egg, egg whites, cottage cheese, cayenne, salt, and nutmeg.
6. Once the spinach and onions have cooled, add them to the bowl and mix well.
7. Spray a pie pan with non-stick cooking spray.
8. Pour mixture evenly in pan.
9. Bake for 30 to 40 minutes or until egg is cooked.

Enjoy! Happy Brunch!

  7. Hi Lisa! I'm Katie, Malia's cohostess for A Crafty Soiree. I think I fixed her link button code so it won't be giant sized! I'm definitely not an HTML expert, as shown by that little or should I say BIG glitch. I've got the code on my Crafty Soiree post, if you want to come by and snag it. Thanks for linking up, I'm sending a link to this to my mom. She'd love it, me too. Spinach and feta are great but we'd be the only ones in the family to like it so we'll have to have a mother daughter brunch and enjoy it together.
